Cappuccino Chip Cookies

I have a raging coffee addiction- I stumble out of bed every single morning and head straight for the coffee pot where I brew my little pod or two or three, during the day I usually enjoy at least one large iced coffee and of course I am always looking for ways to add coffee or coffee flavoring into my recipes. Sound familiar? Are we coffee kindred spirits? Then you are going to love these cappuccino chip cookies, they are like regular old chocolate chip cookies with coffee infused into every bite. These are the cookies you want to hide and then enjoy after the kids go to bed with...well a cup of coffee.

These Frosted Cranberry Sugar Cookies are yummy too!

Cappuccino Chip Cookies

Ingredients:

3 packets single serve cappuccino (or 3 Tbsp.)

3 cups flour

2 cups espresso chips

2 eggs

2 sticks butter, softened

1 cup granulated sugar

1 cup brown sugar

1 tsp. baking soda

1 tsp. vanilla extract

1 tsp. coffee extract

1/4 tsp. salt

Directions:

Preheat your oven to 350°.

In the bowl of a stand mixer cream together butter, sugars, and extracts until fluffy and well mixed.

Beat in eggs, one at a time.

Blend in cappuccino mix just until combined.

In a separate bowl mix flour, salt, and baking soda.

Add flour mixture a bit at a time to wet ingredients until fully incorporated.

 

Gently stir in espresso chips, I found mine at Aldi but if you don't have any nearby you can grab them on Amazon HERE.

Scoop generous spoonfuls onto baking sheet 3" apart.

Bake for 10-12 minutes until edges are browned and crisp.

Let your cookies cool completely before storing in an airtight container. To keep your cookies moist toss in a piece of bread, replace as needed.
