Homemade Chocolate Chip Pancakes
Ingredients-
1 cup milk
1 large egg
2 tablespoons vegetable oil, plus more for cooking
1 cup all-purpose flour
2 tablespoons granulated sugar
1 teaspoon baking powder
1/4 teaspoon salt
¼ tsp vanilla extract
¼ C mini semi-sweet chocolate chips
maple syrup, for serving
Directions-
1. In a mixing bowl, combine the flour, sugar, salt and baking powder.
2.Add the egg, milk, vanilla extract and vegetable oil and stir until combined. No worries about the lumps.
3. Add in the chocolate chips.
4. Heat a skillet over medium heat. Spray with cooking spray.
5. Using a measuring cup pour ¼ cup of batter for each pancake onto the skillet. If you’re not worried about uniform you can just spoon mixture into your skillet.

6. When the top starts to get bubbly, flip over and cook for an additional 1-2 minutes.
7. Top with whatever you like and serve.
These pancakes will also freeze well if you want to make a double batch.
You can even mix things up by adding different ingredients. Just make a double batch of the pancake mix and maybe do a batch of blueberry or banana pancakes.
This would give the kids a variety during the week and you a break on trying to get breakfast ready.
