Easy Shepherd's Pie Recipe

So hubby came home from work and was raving about how good this Shepherd's Pie his co-worker had brought for lunch was. He looks at me and says do you know how to make one? I say of course! It had been several years since I had last made one so I had to really use my brain to remember everything. I was so worried it wasnt going to turn out as good as the one he had at work but I was gonna give it a try. Here is what I used.

What you will need for the Potato's

2 lbs of Potato's

4 tbs of Sour Cream

4 tbs of Butter

1 Egg

1/2 cup of Milk

1 cup of Shredded Cheddar Cheese

Garlic Salt

Pepper

 

Wash, peel, and slice potatoes thin.

Boil the potatoes in water until tender, about 10-12 minutes.

Drain the potatoes and put them into a large bowl. Mash/mix a little.

Add Sour Cream, Butter, Egg, Milk, Cheese, Garlic Salt, & Pepper.

Mash/mix until potatoes are the consistency you like.

Set aside.

For the inside

Cooking Spray

2 lbs Ground Turkey or Beef

1 can of Carrots

1 can of Corn

1 can of Peas

1 small can of Tomato Paste

1 cup Chicken Broth

2 tbs Butter

2 tbs All Purpose Flour

Salt, Pepper and Paprika

Shredded Cheese to top with

 

Spray large skillet with cooking spray. Heat over medium heat add beef or turkey. Cook until brown and break apart well.

Add onions to meat and cook another 5 minutes.

In another small skillet over medium heat cook butter and flour together until it makes a dough like consistency. Whisk in broth and tomato paste slowly working out any lumps.

Add can veggies in pan with the meat.

Add sauce to the pot and mix everything together really good.

In a large casserole dish add the meat mixture.

Spread potatoes evenly over the top of the meat mixture. Sprinkle top with cheddar cheese and garnish with paprika.

Put in oven under the broiler until the cheese has melted and bubbling and potatoes have browned.
