Every time I turned around I was reading articles on how going Gluten Free can help with Autism. I've often considered it due to Mini's many allergies, but never really took the plunge. Mini never made it to the actual allergy testing due to the fact that she has Dermatographism also known as skin writing disease. We did the basic blood work and based on that decided she's allergic to EVERYTHING.
After reading more and more I decided to see for myself on both accounts. We are seeing some improvements on both fronts and will continue on our journey.
Buuuuut, you know Life with Mini always has a but, what I should tell you is that an already picky eater becomes even more picky on the Gluten Free diet.
What they don't tell you is that the textures are very different in Gluten Free breads and cakes. Mini loves to bake and I have no desire to be baking things from scratch so I bought a Betty Crocker Gluten Free Cake Mix. Mini wanted to make cupcakes.
These are her take on Cookie Monster cupcakes. Aren't they cute? The cupcakes are really quite good. They have a great taste but the texture is more like a sponge cake and Mini wasn't having any of that. I mean a cupcake should taste like a cupcake right?
All in all she does pretty well with the new diet but there are some things that lead to screams of “I hate my life”. I can't say that I blame her much, I want to scream too because life without bread is a I hate my life moment for me!
We will press on with our Gluten Free journey; tasked with the quest of finding the perfect cupcake and bread recipe.
Just might have to bake from scratch after all, but such is my Life with Mini and I wouldn't have it any other way.
