A Pepper Ring Omelet is a great way to start your morning. They also make great snacks.

Pepper Ring Omelet

One of the hardest things about eating healthier is feeling like you are depriving yourself of not only flavor but generous proportions. We all know we eat with our eyes first, so one way to kick the feeling of deprivation is to give your eyes something beautiful to look at and make your portions look big (but truly this breakfast is plenty of food!).   Besides the fact that peppers contain vitamin A, C, potassium, folic acid, and fiber they are also a great way to give your dish some texture and beautiful color. *Tip- Red peppers have the most nutrition, due to being on the vine the longest.

Don't even think of this dish as diet food- my husband loves the taste of it as well as Mini, even if you just pick out the egg from the center and don't eat the pepper it still has delicious flavor. Giving it just a bit of bacon and cheese gives you the flavor you crave without going overboard with a fully loaded omelet.

Pepper Ring Omelet

Ingredients:

4 bell pepper slices

2 eggs

1 1/2 tsp. bacon pieces

2 tsp. grated cheese

1 Tbsp. diced pepper mix- peppers, onions, tomatoes

salt and pepper to taste

Directions:

Whisk all ingredients except pepper slices in a bowl to combine well.

Coat a nonstick pan with cooking spray or add a small amount of olive or coconut oil to pan. Heat over medium.

Place peppers in pan and cook for 1 minute.

Pour egg mixture carefully into the center of peppers. and cook about 2-3 minutes until edges firm up.

Carefully flip peppers and cook and additional 2 minutes or until eggs are lightly browned.

Makes 4 pepper servings.
