Philly Cheesesteak Grilled Cheese

Let me start with a disclaimer- I am born and raised in Florida, if you are from Philly and this post offends you due to it's lack of Philly authenticity then I beg you to forgive me and look away. This is MY countrified take on a Philly cheesesteak if it were stuffed into a grilled cheese sandwich. It's real, it's good, and it was a hit across the board. We love grilled cheese but are always looking for creative and more flavorful ways to enjoy them- and this Philly Cheesesteak Grilled Cheese is definitely our new favorite!

Philly Cheesesteak Grilled Cheese

Ingredients:
12 pieces white bread
3/4 lb. rare roast beef
1/2 onion
1 green pepper
8 oz. bag shredded  cheese ( I used an Italian blend)
1 pouch dry Italian dressing mix
Pepper to taste

Directions:
Start by slicing your pepper and onions pretty thin, this is a personal preference but they cook better and work better with on a grilled cheese if they are thinner.

Shred roast beef with your hands into small pieces, toss with Italian dressing, and a couple teaspoons of beef broth to help distribute the seasoning. You can use water if you don't have any broth on hand.

Add a teaspoon or two of oil to a large saucepan over medium-high heat and when it is hot add onions and peppers to the pan. When they are softened and nearly done add your seasoned meat. Reduce heat to medium and saute, stirring frequently, until cooked throughout.

Butter your bread generously on one side, this is no time to be stingy with the butter, and make sure it's real butter-nothing from a tub!

Now you want to pile your bread high with shredded cheese, meat, peppers, and onions.

Grill on both sides until golden brown and the edges are crunchy.

That's it, the simple recipe for the best grilled cheese I have ever had. Hubby couldn't rave enough about the flavor in these grilled cheese, and even my pickiest eater gobbled it up (with the big chunks of onions and peppers pulled out).
