My kids are super picky, one thing I can count on them to always beg for is a Peanut Butter & Jelly Sandwich. However, I am on a mission to reduce refined sugars, and cut carbs in general as much as possible. My answer to the PBJ request is to greet the kids after school with a Protein Packed PB&J Smoothie After School Snack. It can also be enjoyed as breakfast to keep little minds full and focused until lunchtime. It is filling and keeps them satisfied until dinner because it is loaded with protein, and is low in carbs ( you can skip the honey or use your choice of artificial sweetener if you prefer). You could also freeze it into popsicles if your weather is still hot, like it is here in Florida for an after school treat that cools them down at the same time.
1/4 cup milk/almond/coconut milk
1 cup ice
1 T. raw honey
2 tsp. pure strawberry preserves, unsweetened
Toss all your ingredients except the strawberry or grape preserves into the blender and process until smooth. If you want to add more calcium and protein you can freeze your favorite type of milk into cubes and use that in place of the ice.
Pour your smoothie into a glass.
Add preserves a little bit at a time and stir gently, the little surprise pieces of “jelly” being slurped up are delicious surprise!
Add a fun straw and enjoy the taste of an old favorite with a unique twist (it's a great afternoon snack for grown ups too).
