One of the best features of this easy recipe is that it’s so easy to customize. Start with a base of eggs, a little bit a water, and then whisk in diced up pieces of your favorite veggies and meats... oh and don’t forget loads of delicious cheese. Today I’m showing you how I make this easy breakfast recipe.
Sheet Pan Ham and Eggs
Ingredients:
1 dozen eggs
3/4 cup cubed ham
1/2 cup parmesan cheese
1 cup shredded cheddar cheese
2 tablespoons water
Salt and pepper to taste
Directions:
Preheat oven to 350.
Prepare a large baking sheet with a lip on the sides by coating it generously with cooking oil or spray, mine is about an 11 x 17- the size of your pan may require that you use more or less of the egg mixture. If I have too much I either scramble them up and freeze or you can place them in the fridge to use up in the next day or two.
Whisk eggs,water, and salt-and-pepper in a large bowl until well combined.
Fold in the ham and cheese.
Pour the ham and eggs mixture carefully into you’re prepared pan.
Bake for 12-15 minutes until no longer runny.
Remove from oven and allow to cool then slice into whatever serving sizes you like. They can be cut into squares for regular sandwich bread, use a wide mouth mason jar lid to cut perfect circles for bagels or English muffins, or eat it just as it is- a super simple omelette.
