We’ve been looking for ways to lighten up our meals. Tacos are life so these Taco Lettuce Wraps HAD to happen.

They are low carb and can be made even healthier by using ground turkey. I’m not a big fan of using ground turkey but adding in the spices really upped the taste and brought a new appreciation for ground turkey.
Taco Lettuce Wraps
Ingredients
1 lb. Ground Beef or Turkey
1 tsp Chili Powder
1 tsp Cumin
½ tsp Salt
½ tsp Pepper
½ tsp Garlic Powder
½ Cup Water
1 Can Black Beans, rinsed and drained
1 Cup Colby Jack Cheese, shredded
1 Avocado, sliced
½ Cup Sliced Black Olives
½ Red Onion, diced
8 Romaine lettuce leaves

Instructions
In a pan over medium high heat brown the meat, drain and return to the pan over medium heat.
Add the Chili powder, Cumin, Salt, Pepper and Garlic powder stir to combine and let cook 1 minute.
Add the water and beans, simmer until the liquid has almost completely evaporated, remove from heat.

To build, start with the lettuce leaf with the concave portion facing up. Sprinkle 1/8 of the cheese along the center rib, then the meat and beans, the avocado slices, olives and onions.
Serve with sour cream and salsa.
Taco Lettuce Wraps are easy and tasty to make. I would love to be able to say you won’t even miss the taco shell or soft shell but I’d be lying. While these are tasty and do satisfy my taco cravings, there are times when I just gotta have that taco shell.
