Maple Pumpkin Spice Iced Latte

I have a coffee problem...except it's not a problem..coffee is the solution to the problem, right? I also love pumpkin spiced anything and waiting impatiently all year for Fall to roll around .

However, I live in Florida, and we only have a handful of days where a hot drink is a treat so I generally opt for my coffee iced after my first morning cuppa.

I tossed together this delicious Maple Pumpkin Spice Iced Latte the other day after I had microwaved my first cup 3 times and just gave up, it came out so delicious that I had to share it with you guys, my coffee/pumpkin loving friends out there- this one is for you! I even threw in some healthy ACTUAL pumpkin in there to make it a little better and then I threw in some chocolate to balance it out! Grab your mason jars and fill em' up with this tasty treat, it is good for all day long.

Maple Pumpkin Iced Coffee

Ingredients:

1/4 cup pumpkin puree

1 cup milk or almond milk

1 cup brewed coffee, room temperature

1/4 cup maple syrup

1 Tbsp. chocolate chips

1 tsp. pumpkin pie spice

1/2 tsp. vanilla extract

ice- to desired amount

Directions: 

Super easy here folks- toss everything in blender and process until smooth and creamy. The ice is up to you, I did not want mine too watered down so I just threw in a handful- if you want to make it ahead and freeze it in an ice cube tray I would not even use the ice.  Toss the cubes in the blender to make on another day- I would even double the recipe and keep the cubes in a gallon-sized freezer bag for your coffee/pumpkin fixes.

The maple syrup also adds a delicious touch that granulated or brown sugar just doesn't and it amps up the fall flavor.
