While these pecan cookies "technically" aren't considered homemade, I can assure you that no one will think anything differently once they take a bite. But you'll have saved yourself so much time and energy by simply using a boxed cake mix instead!
We love to make these simple pecan cookies for a quick dessert to have and enjoy on the weekends or to make and share with friends. Fair warning though...once they come out of the oven, they're not going to last long! Hands will be grabbing at least one (and maybe two!) to get them while they can!
Once you've been introduced to cake mix cookies, you're going to find yourself quite happy and spoiled at the same time. They offer fun flavors and really do save so much time!
Can you make cake mix cookies without eggs?
You actually can. Just substitute out the eggs for applesauce and that's really all you'll have to do! You just need something to add into the cake to keep it moist so it won't dry out when baking so applesauce does that plus gives it a little sweetness as well.

Pour in melted butter.
Add pecans and mix well.
Refrigerate for one hour.
Roll the dough into tablespoon sized balls.
Place on non-stick baking sheet or lay out a piece of parchment paper and place on top of that.
Bake for 10 minutes or until cookies are set and lightly browned at 350 degrees.
Serve & enjoy!!!
What is the best box cake mix?
This is going to be totally up to you but I really like the ones that have the extra moist aspect added into them. It just makes everything turn out better!
How do you add flavor to a cake mix?
If you're wanting to jazz up the flavor of your cake mix, you can. All you need to do is add in some more butter, milk, or even some drops of flavoring. (or you can cut out those tasks and buy a flavored cake mix, too)
What makes a cake moist?
A lot of times it's with the ingredients that you're using but one of the other biggest tips is that you want to make certain that you're not overtaxing your recipe, too. That will just make it tough and in the end, dry it out.
