Homemade Farm Fresh Strawberry Pancakes

Mixing up a big batch of these fresh strawberry pancakes will not only be a yummy morning treat, it will help you get ahead of the week morning rush. These are super easy to freeze and heat up during the week for a quick morning breakfast when you are running short on time.

What do you need for Fresh Strawberry Pancakes

  • 2 cups flour
  • 4 tbsp. sugar
  • 3 tsp baking powder
  • 1/4 tsp salt
  • 1 cup milk
  • 1 egg
  • 1/4 cup melted butter
  • 1 tbsp. vanilla extract
  • 2/3 pound fresh strawberries

How to make strawberry pancakes from scratch

Mix dry ingredients in a large mixing bowl. Wish them together so your dry ingredients are mixed together well.

Hull the strawberries and run through your food processor or blender until they are chopped up well.

Mix wet ingredients into the dry ingredients. You may see clumps due to your fresh strawberries. This is normal.

How to make strawberry pancakes

Heat your skillet with a small amount of butter (I use Kerry grass fed butter that I get at Aldi) or oil. 

Fry until bubbling stops and flip to cook on the other side.

Add whip cream or maple syrup and enjoy. Be sure to freeze your extra homemade strawberry pancakes to use during the week. Microwave in 15 second increments until heated through.
